In 2013, The Mystic Cheese Company embarked on its humble journey in a shipping container on a farm in Lebanon, CT. During those initial years, our focus was on curating offerings and refining our vision for customers. As our skills and following expanded, we quickly outgrew our modest beginnings. Today, our home is a state-of-the-art cheesemaking facility in Groton, CT, seamlessly integrating elements from our cheesemaking history to create an efficient and self-sustaining space.

Our cheesemaking has undergone a comprehensive evolution. Initially concentrating on fresh and young cheeses suited to our initial facility's limitations, we transitioned to a new space, seizing the opportunity to push the craft's boundaries. Shifting our focus to aging cheese and exploring uncharted styles, we now have the room and equipment to create unprecedented varieties, characterized by milled curd and multi-day fermentation processes.

In the present day, we continue to innovate, workshopping new recipes while retaining the essence of what has proven successful for us. Our commitment extends to perfecting our cheesemaking practices and offering our diverse range of cheeses to the community through our cheese shop, farmers' markets, and retail partnerships.
